SPRING EQUINOX

What exactly is the spring equinox... I can't really say... all I do know is that I in for celebrating the first day of Spring! And warmer weather to come!

SAINT PATRICK'S DAY

Am I Irish... no. Green is not my color... and no... I do not like beer. So some may ask how on earth a day that pretty much celebrates these things made my top five for the week... well I'll tell you... it's pretty simple. If there's a reason to celebrate, go out & have some fun then I'm in for it! It's as simple as that!

SCIENCE FAIR

My very strong willed... some may even say stubborn... third grade niece entered the science fair... which was voluntary I might add. She thought of the concept herself & executed it herself too. Which is much more then I can say for myself... even in the eighth grade lol. Were some of the other booths & posters more professional looking... for sure. But it was also pretty much 100% obvious adults were involved in the process. So I'm pretty damn proud of that little girl doing it all on her own... and the look of pride on her face is priceless.

SUMMER SHOPPING

So if you haven't heard my family is going to the Bahamas for spring break & I must not have done a lot of summer shopping last year because I am going alllllll out this year. I have been having so much fun shopping for all new bathing suits, shorts etc. & checking out this year's trends!

INSTANT POT CHICKEN BURRITO BOWL

I've still been having so much fun experimenting with my Instant Pot & typically it makes so much food for one person that it lasts me most of the week before I have to cook again. It's literally a life saver for meal prepping. My latest recipe I've loved is the chicken burrito bowl. It's super easy & packed with flavor.
